On a sweet potato kick lately. I had this for dinner, but it would be even better for breakfast. I found microwaving the sweet potato before baking it sped up this recipe a TON. If you want to just bake it, it’ll take around 70-80 minutes. Also – try it with brown basmati rice or over a salad!
Ingredients
1 sweet potato
2 medium eggs
2 tbsp hot cause
1 tsp garlic powder
1 tsp chili powder
1 tsp black pepper
Directions
Preheat oven to 350. Stab potato with a fork all over. Microwave 5 minutes, flip, and then another 5 minutes. Carefully cut potato in half and place on tinfoil covered pan thats lightly sprayed with non stick spray. Spoon out about 2 tbsp of sweet potato from each half. Add eggs. Bake for about 20 – 30 minutes or until egg is fully cooked.
