Chicken Noodle Soup with Spiralized Sweet Potato

Wanted to make a soup today but can’t seem to stray too far from sweet potatoes.. they are so good in everything.  They were a little difficult to spiralize so I ended up just cubing one.  This recipe makes a LOT, so I had a ton of leftovers.  Enjoy!

Ingredients:

2 tbsp olive oil

1 onion, diced

1 tbsp garlic, minced

2 sweet potatoes, spiraled and cubed

1 carrot, sliced

2 cups celery, chopped

2 cups chicken, chopped/shredded

2 boxes of low-sodium chicken broth

1 package egg noodles

1/2 cup parsley, finely chopped

Pepper to taste

Directions:

Prepare all ingredients.  Heat olive oil in large pot.  Sautee onions and garlic.  Add the rest of the vegetables and cover for about 5 minutes, stirring occasionally.  Add remaining ingredients and cook until carrots and sweet potatoes are tender, and egg noodles are cooked (~15 minutes).  Serve topped with some parsley.
