Teriyaki Shrimp & Quinoa Stir Fry

I always love a good, quick stir fry.  Try quinoa instead of rice!  Quinoa is a whole grain and is one of the few plant based foods that is a complete protein.   Complete proteins contain all of the essential amino acids.  Quinoa is also a great source of fiber, which has many benefits such as keeping you full longer.  I’ve cooked quinoa all different ways and highly suggest adding spices or sauce, because plain quinoa just isn’t that tasty.  It’s a great food to add to your diet!

Ingredients

1 cup quinoa
2 cups low-sodium chicken broth
1 onion, chopped
1 tbsp garlic, minced
1/2 cup shredded carrots
1/2 cup bell pepper, chopped
1/2 cup mushrooms
1/2 cup celery, chopped
1 cup snap peas
2 tbsp low-sodium teriyaki/stir fry sauce of choice (I used Kikkoman’s stir fry sauce)

Directions

In a large stir fry pan or wok, add quinoa and chicken broth.  Bring to a boil and then simmer covered for about 10 minutes.  Add remaining ingredients and mix together.  Cover, stirring occasionally to prevent burning, for about 10 minutes.
