Quick Quinoa Bowl

Another quinoa bowl… because lately I’ve been bored of chicken and quinoa is such an easy source of protein.  You can do a lot with it too!  For this bowl I just kept it really simple and added only a few ingredients.

Ingredients

1/2 cup quinoa
1 cup chicken broth (low sodium)
1/2 cup petite diced tomatoes
1/2 cup black beans, rinsed
1 tsp garlic powder
1 tsp onion powder
1 tsp chili powder
1 tbsp fresh parmesan

Directions

Add all ingredients in pot and mix.  Bring to a boil.  Reduce to a simmer until quinoa is fully cooked (about 15 minutes).  Top with some fresh parmesan.
