Soba Soup

I needed to make something different, so this soup happened.  Bok choy is so underrated! I love putting it in soup or stir fry.  Also, if you don’t like soba noodles you should try this with rice (I did in the last picture).  For more protein add tofu, chicken, or beef!

Ingredients

1 tbsp olive oil
1 onion, chopped
1 tbsp garlic, minced
1 cup baby bella mushrooms
1/2 cup celery, chopped
2 cups bok choy, chopped
1 serving soba noodles (or rice)
1 32-oz box beef broth
4 eggs, hard-boiled (separately)

Directions

Heat olive oil in a pot.  Add onions and garlic.  Sautée for 2-3 minutes.  Add celery and mushrooms and sautée for a few more minutes.  Add beef broth.  Bring to a boil.  Add soba noodles and let boil for about 6 minutes.  Add bok choy and simmer for about 2 minutes.  Serve and top with halved hard-boiled egg. Enjoy!
