We’re possibly getting two feet of snow tomorrow, so today was the perfect day to prepare some good food! I’ve been wanting to make stuffed peppers for a while and this seemed like a good combination. They were also SO easy and quick to put together. I found that using an ice cream scoop to stuff the peppers worked really well!
Ingredients
1lb Ground turkey (I used 93% lean)
1 cup quinoa, cooked
2 cups chicken broth *
1 cup 50/50 spring mix or spinach, finely chopped
1 can great northern beans, rinsed
1 can petite diced tomatoes reduced sodium, drained
1 onion, diced
1 tbsp garlic, minced
3 bell peppers, rinsed and halved
1/2 cup shredded cheese
Optional: 1 packet Mrs. Dash Taco Seasoning
* I always use chicken broth to cook quinoa, but water can be used
Directions
Preheat oven to 350. Boil chicken broth (or water) in a small pot. Once boiling add quinoa. Simmer for about 10 minutes. Sautée onions and garlic in a large pan for about 3-5 minutes. Add ground turkey and seasoning packet and cook for about 10 minutes. Add tomatoes, beans, and spring mix. Let cook for about 5 minutes, or until turkey is fully cooked. In a large bowl, combine quinoa and turkey mixture. Place pepper halves on foil on a sheet pan sprayed with non-stick spray. Add filling to peppers – I used an ice cream scoop! Evenly distribute the cheese on top of each pepper. Bake for about 10-15 minutes.
