Ingredients
- 1 tbsp olive oil
- ½ cup frozen chopped onion
- 1 tbsp minced garlic
- ½ cup low-sodium chicken broth
- 1 14.5oz can petite diced tomatoes
- 1 cup canned corn
- 1 lb red beans, drained and rinsed
- 1 lb great northern beans, drained and rinsed
- ½ lb kidney beans, drained and rinsed
- 1 tsp cumin
- 1 tsp black pepper
- ½ tsp chili powder
- 2 tsp Italian seasoning
Optional Toppings: Sour Cream, Avocado, Tortilla Strips, Shredded Cheese, Cilantro
Directions for Slow Cooker
- Combine all ingredients in slow cooker
- Cover and cook on medium/high for 4-6 hours
Directions for Stove Top
- Add 1 tbsp avocado oil to a large pot
- Add onion, sauté and mix ~2 minutes
- Add garlic, sauté ~1 minutes
- Add remaining ingredients, mix
- Cover and let simmer ~20 minutes
