Roasted Lemon Garlic Chicken

I came home from class last week and just felt like cooking up a whole chicken.. cause why not?!  Not only does it make the house smell delicious, it’s so easy to make and then you have leftovers for the week.  Also, this is a great way to save money while eating healthy.  This only cost me $5-6 with enough chicken to last the week, which I used in salads and soup.

Ingredients

3.5-4lb whole young chicken
2 tbsp softened unsalted butter or olive oil
1 tbsp garlic, minced
2 tbsp lemon juice
1 cup baby carrots
1 onion, chopped in large pieces
1 tsp rosemary
1 tsp sage
1 tsp thyme

Directions

Preheat oven to 350 degrees.  Place chicken in oven safe pot. Mix softened butter or olive oil with spices, lemon juice, and garlic.  Cover chicken in mixture.  Add carrots and onion around chicken.   Roast for 1.5-2 hours (minimum internal temp of 180).  Enjoy!
