I tend to eat a lot of chicken because it’s so healthy but also fairly cheap. I get bored of it quickly, so I’m constantly looking for new ways to prepare it. Decided to throw this together for lunch and surprised myself at how well it came out..
Ingredients
1 tbsp olive oil
1 pound chicken breasts
1 can stewed tomatoes
1 cup water
1 green pepper, diced
1 cup quinoa
1 tsp minced garlic
1 onion, chopped
1 tsp Italian seasoning
1 tsp chili powder
1 fresh tomato, diced
2 cups spring mix
1/2 avocado
Directions
Heat olive oil in a large pot. Sauté onions and peppers for 5 minutes, or until tender. Add chicken breasts, tomatoes, garlic, and seasonings. Cover and simmer for 10 minutes. Add water and quinoa. Bring to a boil. Cover and simmer for about 15 minutes or until quinoa and chicken are fully cooked. Add more seasoning as needed. Serve on a bed of spring mix, with diced tomato and avocado.
