Taco Style Shredded Chicken

This is super easy and literally took me 5 minutes to prepare. I also finally got around to trying slow cooker liners this week.. They are AMAZING.  Literally no clean up so they are a life saver.  Did a little research and they are safe to use.  They sell them at most grocery stores! Definitely worth a try. 


  • 1.5 lb boneless, skinless chicken breast
  • 2 cups unsalted chicken broth
  • 1 can unsalted petite diced tomatoes
  • 1/2 onion, chopped
  • 1/2 cup green pepper, chopped
  • 1 tbsp garlic
  • 1 packet Mrs. Dash Taco Seasoning
  • Slow cooker liner


Insert slow cooker liner.  Add half the chicken broth.  Add chicken breasts.  Add the rest of the ingredients.  Stir until taco seasoning is combined.  Cook on high for 4 hours or low for 8 hours, or until chicken is fully cooked and shreds easily.  Take chicken breasts out and shred.  Combine them back with other ingredients.  Serve over a bed of rice or on top of a salad!
